Watermark’s sleek and stylish beachside position allows you to take full advantage of its majestic location, enjoying views over Balmoral Beach and across Sydney Harbour to Manly and North Head. Recently acquired by the brother/sister partnership of Mark and Monique McLoughlin, the restaurant has been recently freshly renovated by renowned designer Paul Heckler.
Nick Raitt joins Mark and Monique as they embark on their new venture as Head Chef. His fresh, creative talent has transformed the menu into a stylish, modern Australian delight.

Enjoyed on arrival was a selection of canapés of Bresaola in cured smoked blue cheese, San Danielle Prosciutto bocconcini cherry tomato and a smoked salmon with goats cheese and ricotta matched with a glass of 2002 Arras Tasmanian Sparkling.
Unfortunately the entrée Linguine Al Gamberi was not to everyone’s liking however the 2008 Tim Adam’s Clare Valley Riesling was well accepted. The main course of lamb with assorted side dishes were very popular and were washed down with the 2004 Petra Zingari (Sangiovese Merlot, Syrah & Petit Verdot) from Maremma South West Tuscany.
The yummy pannacotta dessert was great with the Samos Vin doux Muscat. Cheese platters and Morris Tawny Port were the perfect to way to finish.
The horses arse was won by Joe Timpano, guest of George Caruana. A long way from the truth but the closest, only 5 people guessed Italy. Attilio and his staff went to lot of trouble to give us a very enjoyable afternoon.
