This Meeting: Blackwater Ristorante
Australian born Riccardo Roberti has worked as a chef/restraunter most of his adult life, culminating in
critical recognition for his restaurant, ‘Blackwater’ at Sans Souci.
Robert has always been passionate in his support and application of fine Australian produce to Italian
cuisine. Roberti’s considerable local experience has given him an intimate knowledge of the food
industry in Australia, but his success can also be attributed to a long family history of food preparation.

A great day and location for our A.G.M. and lunch, even a seal turned up for a show before lunch. Having
the lower bar to ourselves was excellent.
Canapes: Alaskan crab, mayo and sweet corn tartlet, Antipasto skewer of fetta, olive and semi dried
tomato washed down with Orlando trilogy on the terrace overlooking the marina.
Entrées Moreton bay bug meat, prawn and smoked salmon on leek and onion tart with slow roasted
tomato and horseradish crème ideally matched with Annie’s Lane Riesling.
Main course “Tasmanian wilderness” beef sirloin on parsnip puree, wilted spinach and sesame braised
king abalone mushrooms amply married with a Petersons Shiraz, The horses Arse was won by Michael
Durkin, a Petersons devotee.
Dessert A tasting plate of lemon meringue pie, chocolate whoopie, sweet pastry and fairy floss
accompanied with a Seppelt DP 57 Grand Tokay (a cracker!)
Yankee Swap: Curt held a great Yankee Swap that was great fun, and some great wines were put to
good use.
Overall Daniel and Marissa produced an interesting combination of fare for our taste buds especially the
canapes and entrée providing a super day for all.
